A stay at Deer Creek Cottages includes our innkeeper Carmen's delicious baked Swedish pancakes. The recipe was handed down by the owner, Kelly's grandmother - here it is for you to try at home -
Preheat oven to 425. Beat eggs well and mix in remaining ingredients. Pour into greased 9 x 13 pan and bake in 425 oven for 25-30 min. Sprinkle with powdered sugar, top with cream and serve warm. Serves 6-8.
Cream
1 cup of sour cream
1/8 cup of brown sugar
Mix together and let sit for 10 minutes or until sugar is no longer grainy. Add more or less brown sugar depending on how sweet you want the cream.
